Instructions

   Muddle lemon peel and sugar in a heavy pint glass until a uniform paste forms.

   Add rhum agricole, lemon juice, orange juice, and honey. Use a caralhinho or wooden spoon to spin mixture until integrated and frothy.

   Taste and adjust with more lemon juice or honey for desired balance. Cocktail should be just barely sweet, tart and fragrant.

4. 04

   Strain through a sieve into a small, stemmed glass or over ice in a tall glass.
